Courgette, zucchini, summer squash

Courgettes, zucchini or summer squash are an important food to offer to your baby.

We decided this year to start growing them in our garden as they’re super easy to grow! We started back in April with a few seeds which we grew into seedlings on our kitchen window, before hardening outside as they grew into proper plants.

By June they were ready to transfer into our brand new makeshift vegetable patch where they bloomed! Now we are seeing a new courgette grow each week from each plant As someone who is as far from green-fingered as humanly possible, if I can do it, anyone can!

I was surprised when our courgettes that began growing looked more like pumpkins that long cucumber shaped things. Well apparently that’s totally normal and they’re called round courgettes and are a type of summer squash just like normal courgettes!

Why offer courgette to your baby?

Courgettes soak up the flavour of the herbs and spices you use alongside them and make a welcome addition to so many different meal ideas. This is why we use it so much when we are baby led weaning.

Courgettes are:

  • Rich in potassium
  • Full of Vitamin A and Vitamin D
  • Healthy, tasty and super versatile when it comes to using them in your home cooked meals.

Courgette Fritters for Baby

This recipe is super quick to make and can be batch prepared so that you have a fridge or freezer stash to save you time in the future.

As well as courgette, I used sweetcorn (which I always have a bag of in the freezer) and a couple of herbs and spices to add some extra flavour.

Sweet corn is a great addition to fritters as you can simply throw it in. With frozen, I soak it in boiling water for around ten minutes first, but when I have canned sweetcorn to hand, I simply throw it in!

The herbs I have used in this recipe are totally optional but I find add a bit of extra flavour for your weaning baby.

Can the egg be replaced?

I haven’t tried this, but many of my readers swear by flaxeggs when it comes to using an ingredient to bind.

You could try making these courgette fritters egg free by replacing the egg with 1tbsp flaxmeal + 2.5 tbsp water combined in a bowl then chucked in with the rest of the ingredients at the point you would had added the egg – do let me know if you try this and if it works!



Does the courgette need to be roasted?

Not at all! I roasted the courgette as we had grown some rounded ones and thought it was gonna be pretty tricky to grate! If you have normal cucumber shaped courgettes, simply grate them into the bowl (skin and all!) and combine with the other ingredients to create your fritters. Nom!
